Description

A quick, creamy dessert made with Greek yogurt and cookies that feels fresh and light.


Ingredients

  • 2 cups thick Greek yogurt (full-fat preferred)
  • 12-15 cookies (Biscoff, digestive, graham, butter, or similar)
  • Sliced banana
  • Fresh strawberries or strawberry compote
  • Raspberry compote
  • Chocolate fudge sauce
  • Caramel sauce
  • Crushed chocolate cookies
  • Lemon zest
  • Peanut butter drizzle


Instructions

  1. Place a layer of cookies at the bottom of a glass cup or serving bowl.
  2. Spoon a thick layer of Greek yogurt over the cookies and gently smooth the surface.
  3. Add another layer of cookies on top of the yogurt.
  4. Repeat layering until ingredients are used, finishing with yogurt on top.
  5. Create soft spoon swirls on the surface for texture if desired.
  6. Cover and refrigerate for at least 120 minutes or until set.
  7. Add optional toppings just before serving.

Notes

Pressing the cookie layer lightly helps it stay in place. Smooth yogurt gently to avoid breaking the cookie layer. Chill time lets flavors blend and the yogurt firm up. Add fragile toppings like banana right before serving to keep them fresh.
