A quick and easy family dinner made with ground beef, tortillas, enchilada sauce, and cheese, perfect for busy weeknights.

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 1 1/2 cups shredded cheese
- 8 small flour tortillas
- 1 cup diced onion
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain excess fat.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and some cheese, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Serve warm.
Notes
Browning the beef well builds flavor. Drain fat so the dish is not greasy. A thin layer of sauce on the dish stops sticking and keeps the bottoms from getting soggy.
