- 4 boneless, skinless chicken breasts
- 1 cup brie cheese, cut into small pieces
- 1 large apple, cored and diced
- 2 tablespoons honey
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine diced apple, brie cheese, honey, thyme, salt, and pepper.
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken pocket generously with the apple and brie mixture.
- Heat a skillet over medium heat, add olive oil, and sear stuffed chicken breasts for 4-5 minutes on each side.
- Transfer the seared chicken to a baking dish and bake in the oven for 20-25 minutes until cooked through.
- Let the chicken rest for a few minutes before serving.
