Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup brie cheese, cut into small pieces
  • 1 large apple, cored and diced
  • 2 tablespoons honey
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine diced apple, brie cheese, honey, thyme, salt, and pepper.
  3. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken pocket generously with the apple and brie mixture.
  5. Heat a skillet over medium heat, add olive oil, and sear stuffed chicken breasts for 4-5 minutes on each side.
  6. Transfer the seared chicken to a baking dish and bake in the oven for 20-25 minutes until cooked through.
  7. Let the chicken rest for a few minutes before serving.
