Ingredients

  • 2 large eggs

  • ¼ cup light brown sugar, packed
  • ¾ cup buttermilk (or milk + 1 tbsp vinegar)
  • ¼ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1½ cups peeled, diced tart apple (such as Granny Smith)
  • Optional: ¼ cup chopped pecans or walnuts
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract
  • Extra powdered sugar for dusting

Instructions

  1. Peel, core, and dice apples into small chunks.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk the eggs, granulated sugar, brown sugar, buttermilk, melted butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Fold in the diced apples and nuts (if using).
  6. Preheat waffle iron and spray with nonstick spray.
  7. Pour ¼ cup of batter onto the waffle iron for each donut, cooking until golden brown (about 3–5 minutes).
  8. Transfer cooked donuts to a wire rack to cool slightly.
  9. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable.
  10. Drizzle the glaze over the donuts and dust with extra powdered sugar before serving.

Notes
