- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda

- 2 large eggs
- ⅓ cup granulated sugar
- ¼ cup light brown sugar, packed
- ¾ cup buttermilk (or milk + 1 tbsp vinegar)
- ¼ cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 1½ cups peeled, diced tart apple (such as Granny Smith)
- Optional: ¼ cup chopped pecans or walnuts
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
- Extra powdered sugar for dusting
Instructions
- Peel, core, and dice apples into small chunks.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk the eggs, granulated sugar, brown sugar, buttermilk, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Fold in the diced apples and nuts (if using).
- Preheat waffle iron and spray with nonstick spray.
- Pour ¼ cup of batter onto the waffle iron for each donut, cooking until golden brown (about 3–5 minutes).
- Transfer cooked donuts to a wire rack to cool slightly.
- For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable.
- Drizzle the glaze over the donuts and dust with extra powdered sugar before serving.
Notes
Serve warm for best flavor. Can be stored in an airtight container for up to 2 days or wrapped and refrigerated for up to a week.
