Ingredients

- 1 cup quinoa
- 2 cups water
- 2 apples, diced
- 1/2 cup dried cranberries
- 1/2 cup walnuts, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium pot, bring two cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes.
- Remove quinoa from heat and let it cool.
- In a large mixing bowl, combine diced apples, dried cranberries, walnuts, red onion, and parsley.
- Once cooled, add quinoa to the bowl and gently fold to combine.
- In a small bowl, whisk together olive oil, apple cider vinegar, and a pinch of salt and pepper. Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
To enhance flavor, let the salad chill for about 30 minutes before serving.
