Description

A vibrant and nutritious salad combining quinoa, apples, and cranberries, perfect for any occasion.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 apples, diced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium pot, bring two cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove quinoa from heat and let it cool.
  4. In a large mixing bowl, combine diced apples, dried cranberries, walnuts, red onion, and parsley.
  5. Once cooled, add quinoa to the bowl and gently fold to combine.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, and a pinch of salt and pepper. Pour the dressing over the salad and toss to combine.
  7. Serve chilled or at room temperature.

Notes

To enhance flavor, let the salad chill for about 30 minutes before serving.
