Description
A simple layered potato bake with bacon, onions, and cheese, perfect for busy nights.
Ingredients

- 4 large potatoes, sliced thin
- 6 slices of bacon, chopped
- 1 onion, thinly sliced
- 2 cups shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the chopped bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving the fat in the skillet.
- Add the onions to the skillet and sauté until translucent.
- Layer half of the sliced potatoes in a greased baking dish. Season with salt and pepper.
- Sprinkle half of the cooked bacon, onions, and cheese over the potatoes.
- Add the remaining potatoes on top, then layer with the rest of the bacon, onions, and cheese.
- Drizzle olive oil or melted butter over the top.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the top is golden and bubbly.
Notes
Let the bake rest for 5-10 minutes before cutting it for neat slices. Cool leftovers to room temperature before storing.
