- 200g Feta cheese
- 4 large Eggs
- 300g Cherry tomatoes
- 200g Fresh spinach
- 2 tbsp Olive oil
- Salt to taste
- Pepper to taste
- Herbs (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, combine halved cherry tomatoes and fresh spinach.
- Drizzle with olive oil, then sprinkle generously with salt and pepper.
- Crumble the feta cheese over the top.
- Make small wells in the mixture, just large enough for the eggs.
- Crack an egg into each well, taking care not to break the yolk.
- Sprinkle eggs with a pinch of salt and pepper.
- Bake for about 20-25 minutes, until the edges turn golden and the eggs are cooked to your liking.
- Garnish with fresh herbs if desired and serve warm.
