Description

A delightful dish combining creamy feta cheese, ripe cherry tomatoes, and spinach, all enveloping perfectly baked eggs.


Ingredients

Scale
  • 200g Feta cheese
  • 4 large Eggs
  • 300g Cherry tomatoes
  • 200g Fresh spinach
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • Herbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, combine halved cherry tomatoes and fresh spinach.
  3. Drizzle with olive oil, then sprinkle generously with salt and pepper.
  4. Crumble the feta cheese over the top.
  5. Make small wells in the mixture, just large enough for the eggs.
  6. Crack an egg into each well, taking care not to break the yolk.
  7. Sprinkle eggs with a pinch of salt and pepper.
  8. Bake for about 20-25 minutes, until the edges turn golden and the eggs are cooked to your liking.
  9. Garnish with fresh herbs if desired and serve warm.

Notes

Adjust the baking time based on how runny or firm you prefer your yolks.
