Description

Cozy, soft, and chewy banana oatmeal bars that are perfect for breakfast or snacks.


Ingredients

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mash the ripe bananas in a large bowl until mostly smooth.
  3. Add the rolled oats, honey or maple syrup, cinnamon, vanilla extract, and salt. Mix until combined.
  4. If using, fold in nuts or chocolate chips.
  5. Spread the mixture in the prepared baking dish and smooth the top.
  6. Bake for 20-25 minutes, until the edges are golden brown.
  7. Allow to cool before cutting into bars.

Notes

These bars can be stored at room temperature for up to 2 days or refrigerated for up to a week. They also freeze well for 3 months.
