Instructions
- Cut the salmon into bite-sized pieces.
- In a bowl, combine flour, cornstarch, baking powder, salt, and pepper.
- In another bowl, whisk egg and water. Dip salmon bites in the egg mixture, then coat in the flour mixture.
- Roll the coated salmon in panko breadcrumbs.
- Heat oil in a frying pan over medium heat. Fry the salmon bites until golden brown.
- For the sauce, mix mayonnaise, sweet chili sauce, and sriracha in a bowl.
- Toss the cooked salmon bites in the sauce and serve warm.
Notes
Cut even pieces for uniform cooking. Watch the panko closely as it browns quickly. Toss in sauce while warm for best adhesion.
