Description

Ingredients

  • 1/2 cup Unsalted Butter, room temperature
  • 1 cup White Sugar
  • 2 Large Eggs, room temperature
  • 1/3 cup Whole Milk, room temperature
  • 2 teaspoons Pure Vanilla Extract
  • Juice of 1 Medium Lemon
  • Zest of 2 Large Lemons
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups Fresh Blueberries
  • 1 cup Cream Cheese, cubed

Instructions

  1. Preheat your oven to 350°F (176°C) and prepare a 9×5 inch loaf pan.
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in milk, vanilla, lemon juice, and lemon zest.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Gently fold in blueberries and cream cheese.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 60 to 70 minutes, checking for doneness with a skewer.
  9. Cool in the pan for 20 minutes, then transfer to a wire rack to cool completely before slicing.
