- 1 pound ground chicken or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans white beans (such as cannellini or great northern), drained and rinsed
- 1 can green chilies, diced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot over medium heat, cook the ground chicken or turkey until browned and crumbly, about 5-7 minutes.
- Add the chopped onion and minced garlic, sautéing until the onions turn translucent.
- Stir in the rinsed white beans and diced green chilies.
- Pour in the chicken broth, sprinkle in the cumin and oregano, and season with salt and pepper to taste.
- Bring to a simmer, then reduce the heat and let it cook for about 20 minutes.
- Remove from heat and stir in the sour cream and optional shredded cheese until smooth.
- Serve hot, topped with chopped cilantro if desired.
