Description

Ingredients

  • 1 pound ground chicken or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans white beans (such as cannellini or great northern), drained and rinsed
  • 1 can green chilies, diced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot over medium heat, cook the ground chicken or turkey until browned and crumbly, about 5-7 minutes.
  2. Add the chopped onion and minced garlic, sautéing until the onions turn translucent.
  3. Stir in the rinsed white beans and diced green chilies.
  4. Pour in the chicken broth, sprinkle in the cumin and oregano, and season with salt and pepper to taste.
  5. Bring to a simmer, then reduce the heat and let it cook for about 20 minutes.
  6. Remove from heat and stir in the sour cream and optional shredded cheese until smooth.
