2 eggs

1/2 cup sour cream or full-fat Greek yogurt

1½ cups fresh or frozen blueberries (tossed in 1 tbsp flour)

**Crumb Topping:**

1/2 cup all-purpose flour

1/3 cup brown sugar

1/4 tsp ground cinnamon

1/4 cup cold butter, cubed


Instructions

1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan.

2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.

3. In a separate bowl, combine melted butter, eggs, vanilla, milk, and sour cream.

4. Gradually add the dry ingredients into the wet, mixing just until combined.

5. Gently fold in the blueberries (tossed in flour) with a spatula.

6. Pour batter into the pan and smooth the top evenly.

7. Make crumb topping by cutting cold butter into the flour, sugar, and cinnamon.

8. Sprinkle the crumb mixture over the top of the batter.

9. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.

10. Let the cake cool in the pan for 15 minutes before slicing and serving.

– Swap Greek yogurt for sour cream if desired
