Description

Quick and easy baked treats filled with sweet blueberries, perfect for snacks or parties.


Ingredients

  • 1 cup fresh blueberries
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 package refrigerated pie crusts
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, mix the blueberries, sugar, cornstarch, and lemon juice.
  3. Roll out the pie crusts and cut into squares.
  4. Place a spoonful of the blueberry mixture in the center of each square.
  5. Fold the edges over to seal and shape into a ball.
  6. Place on a baking sheet lined with parchment paper.
  7. Brush with egg wash and bake for 20-25 minutes until golden brown.
  8. Let cool slightly and dust with powdered sugar before serving.

Notes

Cool fully before storing. They can be kept in an airtight container in the fridge for 3-4 days or frozen for up to 2 months.
