Description
Delicious sandwich cookies filled with whipped cream and topped with chocolate, reminiscent of a classic Boston cream pie.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 cup chocolate glaze (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into small balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the cookies are lightly golden around the edges. Allow them to cool completely.
- In a medium bowl, whip the cream and powdered sugar until stiff peaks form.
- Once the cookies are cool, sandwich a generous amount of whipped cream between two cookies.
- Drizzle the chocolate glaze over the top of the filled cookies.
