Description

Delightful bite-sized pancake poppers that are fluffy on the inside and crispy on the outside, perfect for breakfast or a snack.


Ingredients

Scale
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F and grease a mini muffin pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
  4. Fold the wet ingredients into the dry ingredients gently, being careful not to over-mix.
  5. Scoop the batter into the mini muffin pan, filling each cavity about two-thirds full.
  6. Bake for 10 to 12 minutes until golden and a toothpick comes out clean.
  7. Let cool slightly and serve warm with syrup.

Notes

Don’t over-mix the batter to ensure fluffy poppers. Experiment with different add-ins like chocolate chips or fruit.
