Description

These small, round cookies are rich and nutty with a light dusting of powdered sugar, making them perfect for any gathering.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped pecans
  • 1/4 teaspoon salt
  • Additional powdered sugar for coating

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. Gradually add the flour, chopped pecans, and salt to the butter mixture, mixing until the dough comes together.
  5. Roll the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes, or until the bottoms are lightly golden.
  7. Remove from the oven and allow to cool slightly.
  8. While still warm, roll the cookies in additional powdered sugar to coat.
  9. Let them cool completely on a wire rack before serving.

Notes

Creaming the butter and sugar well adds air and helps the cookies stay tender. Roll while warm so the sugar sticks well.
