- 1 sheet of puff pastry
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 ounces goat cheese, crumbled
- Fresh thyme or parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat the olive oil over medium heat. Add the sliced onions with a pinch of salt and stir occasionally for about 20 minutes until caramelized.
- Roll out the puff pastry on a floured surface and cut into squares.
- Place the pastry squares on a baking sheet and top with caramelized onions and crumbled goat cheese.
- Bake for 15-20 minutes or until the pastry is puffed and golden brown.
Notes
