- 2 cups crushed graham crackers or digestive biscuits
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup cherry filling (canned or homemade)
- 1/2 cup chopped pistachios
- 1/4 cup powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the crushed graham crackers with the melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust.
- Beat the cream cheese and granulated sugar in a large mixing bowl until smooth.
- Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Stir in the sour cream until well combined.
- Pour the cheesecake batter over the prepared crust.
- Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center is slightly jiggly.
- Remove from the oven and let it cool.
- Spread the cherry filling on top and sprinkle with chopped pistachios.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
- Optionally, dust with powdered sugar before serving.
Notes
Press the crust firmly so it holds when slicing. Beat the cream cheese until smooth to avoid lumps. Do not overbake; a slight jiggle in the center means it will set as it cools. Chill well for clean slices.
