Description

Soft, chewy cookies with a rich brown sugar flavor, perfect for sharing or enjoying with a warm drink.


Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, brown the unsalted butter over medium heat until golden and fragrant, then let cool slightly.
  3. In a large mixing bowl, combine the browned butter, brown sugar, and granulated sugar, then stir until smooth.
  4. Crack in the eggs one at a time, mixing thoroughly after each addition along with the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  6. Drop tablespoonfuls of dough onto a lined baking sheet, leaving space between each.
  7. Bake for 10-12 minutes until the edges are golden and centers are still soft. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a thicker cookie, consider chilling the dough for 30 minutes before baking.
