- 1.5 pounds Chicken Breasts, evenly sized
- 8 ounces Fresh Mozzarella Cheese, sliced
- 1 cup Cherry Tomatoes, halved
- 2 tablespoons Olive Oil
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 3 tablespoons Balsamic Glaze
- 1/4 cup Fresh Basil Leaves, shredded
Instructions
- Season chicken breasts with salt, pepper, and dried oregano.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5 to 6 minutes per side until golden and cooked through.
- Top each breast with mozzarella slices and halved tomatoes.
- Cover with a lid for 2 minutes until the cheese is melted.
- Remove from heat and drizzle with balsamic glaze.
- Garnish with fresh basil and serve immediately.
Notes
Season well so the chicken tastes good on its own. Searing first locks in juices and gives color. The lid step melts cheese fast without drying the chicken.
