- 2 cups cooked chicken, cubed (rotisserie chicken works great)
- 1 cup frozen peas
- 1 cup diced carrots
- 1/2 cup diced onion
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1/2 cup whole milk (or half-and-half for a creamier filling)
- 1 teaspoon garlic powder
- 1 teaspoon thyme (fresh or dried)
- 1/2 teaspoon black pepper
- 1 can (16 oz) refrigerated biscuit dough (or homemade biscuit dough if preferred)
- Salt to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, melt the butter and add the diced onions and carrots. Sauté for about 3–4 minutes until soft.
- Stir in the frozen peas and cook for another two minutes.
- Sprinkle the flour over the vegetables, stir to combine, and cook for another minute to form a roux.
- Slowly pour in the chicken broth while stirring constantly, then add the milk, garlic powder, thyme, and black pepper.
- Bring to a gentle simmer and cook until thickened, about five minutes.
- Stir in the cubed cooked chicken and warm through for 2–3 minutes.
- Pour the filling into the prepared baking dish and spread it evenly.
- Tear the biscuit dough into quarters and arrange over the top of the filling.
- Bake for 25–30 minutes until the biscuit topping is golden brown and the filling bubbles.
- Let the casserole rest for 5–10 minutes before serving.
Notes
Serve with fresh parsley on top for added color and freshness. Pairs well with a green salad or roasted vegetables.
