- 2 cups cooked rice
- 1 cup cooked chicken, shredded
- 1 cup mixed fresh vegetables (like bell peppers, cucumber, and carrots)
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup
- 2 tablespoons lime juice
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped peanuts and fresh cilantro for garnish
Instructions
- Combine the cooked rice, shredded chicken, and mixed fresh vegetables in a large bowl.
- Mix together the peanut butter, soy sauce, honey (or maple syrup), lime juice, sesame oil, salt, and pepper in a separate bowl until smooth.
- Pour the peanut dressing over the rice and chicken mixture and toss until everything is evenly coated.
- Serve immediately, garnished with chopped peanuts and fresh cilantro or chill in the fridge for later.
Notes
Mix the dressing well so it is smooth and not lumpy. If the sauce is too thick, add a teaspoon of warm water at a time. Chilling will let flavors meld but the rice will absorb more sauce.
