Description

These quick and easy no-bake bars blend cooked quinoa, chocolate, nut butter, and puffed grains for a chewy, crunchy snack perfect for lunch boxes or dessert.


Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup dark chocolate chips
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup puffed rice or puffed quinoa
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix together cooked quinoa, chocolate chips, peanut butter, honey, puffed rice, salt, and vanilla extract until well combined.
  2. Press the mixture into a greased or lined 8×8 inch baking dish.
  3. Refrigerate for at least 1 hour until firm.
  4. Once set, cut into bars and serve.

Notes

Store the bars in an airtight container in the fridge for up to one week, or freeze separately for up to two months. Use a sharp knife for clean cuts.
