Ingredients

Scale
  • 270 g (2¼ cups) all-purpose flour
  • 4 g (1 tsp) baking powder
  • ¼ tsp salt
  • 170 g (1½ sticks / ¾ cup) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 1 large egg, room temperature
  • 1 Tbsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 54 g (⅓ cup) Christmas jimmies sprinkles
  • 283 g (1¼ bricks / 10 oz) full-fat cream cheese, softened
  • 184 g (13 Tbsp) salted butter, softened
  • 2 tsp vanilla extract
  • ⅛ tsp salt
  • 150 g (1¼ cups) powdered sugar, sifted
  • 80 ml (⅓ cup) heavy cream, very cold
  • 24 g (2 Tbsp) Christmas sprinkles (jimmies, nonpareils, trees, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C) and line 2-3 baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a stand mixer, beat the softened butter and granulated sugar on medium speed until fluffy.
  4. Add in the egg and vanilla extract; mix until combined.
  5. Gradually add the dry mixture to the wet ingredients in two parts, mixing gently.
  6. Fold in the Christmas jimmies sprinkles.
  7. Using a cookie scoop, portion out and roll the dough into balls; place on prepared sheets.
  8. Slightly flatten each dough ball to about ½-inch thick.
  9. Bake for 9-11 minutes until edges are set but tops are soft.
  10. Remove from oven, and gently shape cookies into circles before cooling on racks.
  11. For the frosting, beat cream cheese and salted butter until smooth. Add vanilla and salt, then gradually mix in powdered sugar and cold heavy cream until fluffy.
  12. Pipe or spread frosting on cooled cookies and top with more festive sprinkles.

Notes
