- 4 cups Chicken broth
- 1 can Coconut milk
- 3 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 pound Boneless chicken thighs
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Long-grain white rice
- 2 stalks Green onions, for topping
- 1 tablespoon Curry powder
- 1/2 teaspoon Turmeric
- 1/4 cup Fresh cilantro
- 2 pieces Lime wedges
Instructions
- Season chicken with salt and pepper and brown in a pot.
- Remove chicken, then add garlic and ginger. Cook briefly to release aromas.
- Stir in curry powder and turmeric. Toast lightly for a minute.
- Add broth and coconut milk, then bring to a low boil.
- Stir in rice and return chicken to the pot. Cover and simmer until rice is tender and chicken is cooked, about 15–20 minutes.
- Turn off heat, let sit for 5 minutes, fluff rice, and check seasoning.
Notes
Browning and toasting the spices enhance the flavor. This dish is flexible for other addition or variations.
