- 1½ pounds boneless, skinless chicken breasts or thighs
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced (optional)
- 1 can (4 ounces) diced green chiles
- 2 cans (15 ounces each) cannellini or great northern beans, drained and rinsed
- 1 cup frozen or canned sweet corn, drained
- 4 cups low-sodium chicken broth
- ½ cup sour cream
- ½ cup shredded Monterey Jack or pepper jack cheese
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon ground coriander
- ½ teaspoon smoked paprika
- ½ teaspoon salt, or to taste
- ¼ teaspoon ground white pepper
- ¼ teaspoon cayenne pepper (optional)
- Fresh cilantro, chopped
- Additional sour cream and cheese, for serving
Instructions
- Pat the chicken dry and season both sides with salt and pepper.
- Heat oil in a large pot or Dutch oven over medium heat and sear the chicken for 2-3 minutes per side until golden.
- Remove the chicken and set aside on a plate.
- In the same pot, cook diced onion for 3-4 minutes until translucent.
- Add garlic and jalapeño (if using), and stir for another minute.
- Stir in diced green chiles, ground cumin, oregano, coriander, smoked paprika, white pepper, and cayenne, cooking for about a minute.
- Return the seared chicken to the pot along with the beans, corn, and chicken broth. Stir well and bring to a gentle simmer.
- Cover and let cook for 15-20 minutes or until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Stir in sour cream and cheese until melted into the chili. Adjust seasoning if necessary.
- Ladle into bowls, garnishing with cilantro and extra sour cream or cheese as desired.
