Description

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1 cup fresh cranberries (or dried cranberries)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup pecans, chopped
  • 1/4 cup feta cheese (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness and drain.
  2. Cook quinoa in 2 cups of water according to package instructions (about 15 minutes). Allow to cool.
  3. In a large bowl, combine cooled quinoa, diced apple, cranberries, red onion, pecans, and feta cheese if using.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  5. Drizzle dressing over salad and gently toss to combine.
