- 1 cup quinoa
- 2 cups water
- 1 apple, diced
- 1 cup fresh cranberries (or dried cranberries)

- 2 tablespoons apple cider vinegar

Instructions
- Rinse quinoa under cold water to remove bitterness and drain.
- Cook quinoa in 2 cups of water according to package instructions (about 15 minutes). Allow to cool.
- In a large bowl, combine cooled quinoa, diced apple, cranberries, red onion, pecans, and feta cheese if using.
