Description
Cranberry Orange Chicken is a bright, easy chicken dinner made with fresh cranberries, orange juice, and honey. The chicken bakes in a light, tangy glaze that feels fresh and flavorful, perfect for quick weeknight meals or small family dinners.
Ingredients
4 chicken breasts
1 cup fresh cranberries
1 orange, juiced and zested
1/2 cup chicken broth
1/4 cup honey
2 tbsp olive oil
Salt, to taste
Black pepper, to taste
Fresh thyme, for garnish (optional)
Instructions
1. Preheat the oven to 375°F (190°C).
2. Heat olive oil in a skillet over medium heat.
3. Season chicken breasts with salt and pepper and sear until golden brown on both sides.
4. In a bowl, mix cranberries, orange juice, orange zest, chicken broth, and honey.
5. Place seared chicken into a baking dish and pour the cranberry orange sauce over the top.
6. Bake uncovered for 25 to 30 minutes until chicken is cooked through and reaches 165°F.
7. Remove from oven and let rest for a few minutes.
8. Garnish with fresh thyme if desired and serve warm.
Notes
If you prefer a thicker sauce, bake uncovered and spoon the sauce over the chicken halfway through cooking.
