- 1 can of diced tomatoes
- 2 cups of canned tomatoes
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1/2 cup of heavy cream
- 1/4 cup of grated Parmesan cheese
- Fresh basil leaves
- Salt and pepper to taste
- Grilled cheese sandwiches for serving
Instructions
- Heat a pot over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add the canned tomatoes and vegetable broth, and let it simmer for 10 minutes.
- Blend the soup until silky smooth using an immersion blender.
- Stir in heavy cream and Parmesan cheese, cooking for another 5 minutes on low heat.
- Season with salt and pepper to taste before serving hot with grilled cheese sandwiches.
Notes
For a dairy-free version, substitute heavy cream with coconut milk. You can also use fresh tomatoes instead of canned; just peel and simmer longer.
