Description

A comforting and creamy tomato soup that balances tangy tomatoes with aromatic garlic and fresh basil, perfect for chilly days.


Ingredients

Scale
  • 1 can of diced tomatoes
  • 2 cups of canned tomatoes
  • 2 cloves of garlic, minced
  • 1 cup of vegetable broth
  • 1/2 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • Fresh basil leaves
  • Salt and pepper to taste
  • Grilled cheese sandwiches for serving

Instructions

  1. Heat a pot over medium heat and sauté minced garlic until fragrant, about 1 minute.
  2. Add the canned tomatoes and vegetable broth, and let it simmer for 10 minutes.
  3. Blend the soup until silky smooth using an immersion blender.
  4. Stir in heavy cream and Parmesan cheese, cooking for another 5 minutes on low heat.
  5. Season with salt and pepper to taste before serving hot with grilled cheese sandwiches.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. You can also use fresh tomatoes instead of canned; just peel and simmer longer.
