Ingredients

  • 2 tablespoons butter (or olive oil)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup sliced carrots
  • 1 cup frozen peas
  • 1 can cream of mushroom soup
  • ½ cup milk
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup bread crumbs
  • ¼ cup Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onion and garlic in butter until soft.
  3. Add mushrooms, then add carrots, broccoli, and cauliflower; cook for a few minutes.
  4. Stir in peas, soup, milk, sour cream, thyme, salt, and pepper until well combined.
  5. Pour the mixture into a greased baking dish and sprinkle with cheese.
  6. Mix bread crumbs and Parmesan together and scatter on top.
  7. Bake until the top is brown and the center is hot, about 25-30 minutes.
  8. Let rest for five minutes before serving.
