- 1 can (15 oz) white beans, drained and rinsed
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup heavy cream or a plant-based alternative
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and sliced mushrooms, and cook until the mushrooms are browned, about 5-7 minutes.
- Add the white beans and vegetable broth to the skillet.
- Bring to a simmer, then stir in the heavy cream.
- Season with salt and pepper to taste, and cook for an additional 5 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
