Description

A quick and simple one-pan meal featuring creamy white beans and savory mushrooms, perfect for busy weeknight dinners.


Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream or a plant-based alternative
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and sliced mushrooms, and cook until the mushrooms are browned, about 5-7 minutes.
  4. Add the white beans and vegetable broth to the skillet.
  5. Bring to a simmer, then stir in the heavy cream.
  6. Season with salt and pepper to taste, and cook for an additional 5 minutes until heated through.
  7. Garnish with fresh parsley before serving.

Notes
