Description

A deliciously creamy and comforting Chicken Chili perfect for chilly evenings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Gather all ingredients.
  2. In a large pot, warm up olive oil and sauté onion and garlic until translucent.
  3. Add shredded chicken, white beans, diced green chilies, cumin, oregano, salt, and pepper.
  4. Pour in chicken broth and bring to a simmer.
  5. Stir in heavy cream and let simmer for an additional 10 minutes.
  6. Serve hot, garnished with chopped cilantro.

Notes

For a lighter version, substitute half of the heavy cream with Greek yogurt. Adjust seasoning before serving and consider adding lime juice for brightness.
