- 2 cups leftover rice
- 2 large eggs
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1/4 cup grated cheese (optional)
- Salt and pepper to taste
- Oil for frying
Instructions
- Combine leftover rice, eggs, breadcrumbs, green onions, cheese (if using), salt, and pepper in a large bowl. Mix well until combined.
- Shape the mixture into patties, pressing them firmly but not too tight.
- Heat oil in a frying pan over medium heat until hot.
- Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove and drain on paper towels.
- Serve warm with yogurt, hot sauce, or ketchup.
Notes
Using cold, dry rice helps the patties bind better. Adjust seasoning before frying for best flavor.
