- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Corn tortillas
- Fresh cilantro, for garnish
- For cilantro lime crema: 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Toss cauliflower florets with olive oil, chili powder, cumin, salt, and pepper. Spread on a baking sheet in a single layer.
- Roast for 25-30 minutes until crispy and golden, tossing halfway through.
- While the cauliflower is roasting, make the cilantro lime crema by blending sour cream or Greek yogurt, cilantro, lime juice, and salt until smooth.
- Warm the corn tortillas in a dry skillet over medium heat.
- Assemble the tacos by placing the roasted cauliflower on the tortillas and drizzling with cilantro lime crema.
- Garnish with fresh cilantro and serve.
Notes
High oven heat helps the cauliflower brown and get crisp edges. Warm the tortillas briefly so they stay soft and fold easily.
