Description

A refreshing salad featuring fresh cucumbers coated in a rich and spicy peanut sauce, perfect for a quick snack or side dish.


Ingredients

  • 2 large cucumbers
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili paste or sriracha (adjust to taste)
  • 1 garlic clove, minced
  • Sesame seeds, for garnish
  • Chopped cilantro or green onions, for garnish

Instructions

  1. Slice the cucumbers into thin rounds or spears.
  2. In a bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, chili paste, and minced garlic until smooth.
  3. Toss the cucumber slices in the peanut sauce until evenly coated.
  4. Let it sit for a few minutes to allow the flavors to meld.
