Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Pour in the beaten eggs, cooking undisturbed until set and fluffy. Remove and set aside.
- Add the mixed vegetables to the pan and sauté for a few minutes until vibrant.
- Stir in minced garlic and cook until fragrant.
- Add the cold rice, breaking up clumps and heating through.
- Stir in the scrambled eggs and soy sauce, tossing to combine.
- Add sliced green onions, adjust seasoning as needed, and serve hot.
