Description

A comforting bowl of fried rice filled with vibrant vegetables and rich flavors, perfect for a quick dinner or hearty side.


Ingredients

  • 2 cups day-old cooked rice
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Pour in the beaten eggs, cooking undisturbed until set and fluffy. Remove and set aside.
  3. Add the mixed vegetables to the pan and sauté for a few minutes until vibrant.
  4. Stir in minced garlic and cook until fragrant.
  5. Add the cold rice, breaking up clumps and heating through.
  6. Stir in the scrambled eggs and soy sauce, tossing to combine.
  7. Add sliced green onions, adjust seasoning as needed, and serve hot.

Notes
