A nourishing and indulgent coconut chia seed pudding, perfect for breakfast, dessert, or a healthy snack.
Ingredients

- 2 tbsp chia seeds
- 1 tbsp coconut flakes, unsweetened
- 1 tsp pure vanilla extract
- 1 tbsp raw honey (or maple syrup for vegan option)
- 1/2 cup coconut milk
Instructions
- In your jar or jars, add all of the ingredients. Layer them: chia seeds first, then coconut milk, followed by honey, vanilla, and finished with coconut flakes.
- Mix well to combine using a small whisk or fork, whisking vigorously for about 20-30 seconds.
- Stir a couple of times within the first 5 minutes to prevent clumping.
- Cover with airtight lids and store in the fridge overnight (at least 6 hours).
- Before serving, stir to smooth the surface, top with fresh fruit, and enjoy!
Notes
For a smoother pudding, blend the mixture briefly before refrigerating to break down the chia slightly. For nut-free, substitute coconut milk with oat milk or almond milk.
