Description

A simple, comforting casserole featuring tender chicken, vibrant vegetables, and creamy tzatziki sauce.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup Tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish with olive oil.
  2. Add chicken, cherry tomatoes, zucchini, and red onion to the baking dish, spreading them into an even layer.
  3. Drizzle with olive oil, sprinkle with oregano, salt, and pepper, then toss to coat.
  4. Spoon tzatziki sauce evenly over the mixture and gently mix to combine.
  5. Bake uncovered for 30–35 minutes, until chicken is cooked and vegetables are tender.
  6. Remove from the oven and sprinkle feta cheese on top, then serve hot.
