Description

A quick and delicious bowl of soba noodles tossed in a savory, sweet sauce perfect for busy nights.


Ingredients

Scale
  • 200g soba noodles
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon maple syrup or honey
  • 1 clove fresh garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons neutral oil

Instructions

  1. Cook soba noodles in boiling water according to package instructions, stirring gently during the first minute.
  2. Once tender, drain and rinse noodles under cold water until water runs clear.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, garlic, ginger, red pepper flakes, and neutral oil.
  4. If desired, mix cornstarch with water and simmer to thicken the sauce.
  5. Toss the noodles with the sauce and serve warm or cold with preferred toppings.

Notes

For best texture, rinse noodles well to remove starch. Feel free to customize with proteins and toppings!
