- 8 oz chocolate (for melting)

Instructions
- Combine crushed gingerbread cookies and softened cream cheese in a mixing bowl.
- Mix in ground ginger, cinnamon, and nutmeg until well combined.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a parchment-lined baking sheet and chill for 30 minutes.
- Melt the chocolate in a microwave or double boiler.
- Dip each chilled truffle into the melted chocolate, letting the excess drip off.
- Sprinkle festive sugar or additional spices on top while the chocolate is warm.
- Return the truffles to the refrigerator to let the chocolate set.
Notes
