- 6 medium-sized potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh chives, for garnish (optional)
Instructions
- Gather all ingredients, peeling and dicing the potatoes.
- In a bowl or directly in the slow cooker, combine the diced potatoes, onion, garlic, and broth, stirring to mix.
- Set the slow cooker to low and let it simmer for 6 to 8 hours.
- In the last half hour of cooking, stir in the heavy cream.
- For a creamier consistency, blend a portion of the soup using an immersion blender, leaving some chunks for texture.
- Season with salt and pepper to taste, and garnish with chives before serving.
Notes
Feel free to customize with cheese or other garnishes. The soup can be stored in the refrigerator for 4-5 days, or frozen for up to 3 months.
