- 3 carrots, diced
- 2 stalks celery, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 2 cups chopped kale or spinach
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic; sauté until softened and translucent.
- Add diced carrots and celery; cook for about 5 minutes.
- Stir in diced zucchini and bell pepper; cook for another 3 minutes.
- Pour in vegetable broth and diced tomatoes; season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes.
- Stir in chopped kale or spinach and cook until wilted.
- Taste and adjust seasoning if needed before serving hot.
