Description

Delicious, savory egg muffins baked with fresh spinach and tangy feta cheese, perfect for quick breakfasts and meal prep.


Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • Salt and pepper to taste
  • Optional: diced vegetables (bell peppers, onions, tomatoes) or cooked meats (ham, bacon)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until smooth and slightly frothy.
  3. Fold in the chopped spinach, crumbled feta, and any optional ingredients.
  4. Pour the mixture into the greased muffin tins, filling each cup about two-thirds full.
  5. Bake for 18-20 minutes, or until the edges are golden and the centers are set.
  6. Allow to cool slightly before removing from the tin.
  7. Serve warm or store in the refrigerator for meal prep.
