Description

Ingredients

  • 1 cup dried black elderberries
  • 4 cups water
  • 1 cinnamon stick
  • 3 cloves
  • 1 thumb-size piece fresh ginger
  • 1 cup raw honey

Instructions

  1. In a pot, combine dried elderberries, water, cinnamon stick, cloves, and fresh ginger.
  2. Bring to a boil, then lower the heat and simmer for about 45 minutes.
  3. Mash the berries to extract juices.
  4. Strain the mixture through a fine mesh sieve.
  5. Let the liquid cool and stir in the raw honey.
  6. Bottle and store in the fridge.
