Ingredients

  • 1 medium cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 1 cup alfalfa sprouts or lettuce
  • Salt and pepper to taste

Instructions

  1. Lay the tortillas flat on a clean surface.
  2. Spread a generous layer of softened cream cheese over each tortilla, leaving a half-inch border around the edges.
  3. Sprinkle the chopped fresh herbs evenly over the cream cheese.
  4. Layer in the colorful vegetables starting with bell pepper, followed by cucumber slices, shredded carrots, and alfalfa sprouts or lettuce.
  5. Season with salt and pepper.
  6. Roll the tortilla from the filled edge towards the empty edge, tucking in the fillings as you go.
  7. Slice the roll-ups into bite-sized pieces, about one to two inches thick.
