- 2 pounds Yukon gold potatoes
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 1 tablespoon oregano
- 1 cup crumbled feta cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the Yukon gold potatoes into wedges and place them in a mixing bowl.
- Drizzle with extra-virgin olive oil and fresh lemon juice, and add minced garlic and oregano to the bowl.
- Toss the potatoes until they are evenly coated.
- Spread the potatoes on a baking sheet in a single layer.
- Bake in the preheated oven for about 30-35 minutes, or until golden and crispy, stirring halfway through.
- Remove from the oven and fold in crumbled feta cheese just before serving.
Notes
Preheating makes the potatoes start browning right away. Tossing well gives even color and flavor. A single layer on the sheet helps crisp the edges.
