Ingredients

- 1 pound ground turkey
- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/2 medium onion
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Crumble the ground turkey into the skillet and cook for 6–8 minutes, stirring frequently, until fully browned.
- Add sliced zucchini and cook for 4–5 minutes, until tender but firm.
- Season with oregano, salt, black pepper, and crushed red pepper flakes.
- Pour in chicken broth, stir, and simmer for 3–4 minutes.
- Sprinkle grated Parmesan cheese over the skillet and stir until melted and coated.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3–4 days. Can be frozen for up to 2 months.
