Description

A simple and hearty casserole made with ground beef, sliced potatoes, and cheese, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, chopped fine
  • 4 cups peeled and thinly sliced potatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 3/4 cup milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 teaspoon garlic powder
  • Optional: Fresh parsley for garnish


Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. Cook the ground beef with chopped onion in a big skillet over medium heat until the meat is no longer pink.
  3. Drain off excess fat.
  4. Mix together the cream of mushroom soup and milk until mostly smooth, then add salt, pepper, and garlic powder if using.
  5. Layer half of the sliced potatoes in the greased dish.
  6. Top with half the cooked beef-onion mixture.
  7. Drizzle half of the soup mixture over everything.
  8. Sprinkle about a third of the cheese over this layer.
  9. Repeat with the remaining potatoes, beef, and soup mixture, then top with the rest of the cheese.
  10. Cover with foil and bake for about 45 minutes.
  11. Uncover and bake for another 20–25 minutes, or until the potatoes are tender and the cheese is bubbling and golden.
  12. Let sit for 5–10 minutes before serving.

Notes

Greasing the dish saves cleanup. Draining fat keeps the dish from getting greasy. Covering first helps the potatoes steam, and uncovering lets the top brown.
