Description

Delicious healthy cookies made with almond flour and coconut oil, perfect for snacking anytime.


Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, combine honey or maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in dark chocolate chips or nuts.
  6. Scoop tablespoon amounts of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Let cool on the baking sheet before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for 3 days, in the fridge for up to a week, or freeze for up to 3 months.
