Ingredients

- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, coconut flour, baking soda, and salt.
- In another bowl, combine honey or maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in dark chocolate chips or nuts.
- Scoop tablespoon amounts of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are golden.
- Let cool on the baking sheet before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for 3 days, in the fridge for up to a week, or freeze for up to 3 months.
