Description

Chewy and lightly sweet granola bars made with sunflower seed butter, perfect for a quick snack or breakfast.


Ingredients

  • 2 cups rolled oats
  • 1 cup nuts (e.g., almonds or walnuts)
  • 1/2 cup honey or maple syrup
  • 1/2 cup dried fruits (e.g., cranberries or raisins)
  • 1/2 cup nut butter alternative (e.g., sunflower seed butter)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Combine oats, nuts, dried fruits, and salt in a large bowl.
  3. Warm honey (or maple syrup) and nut butter alternative over low heat until melted, then stir in vanilla extract.
  4. Pour the wet ingredients into the dry and mix until well coated.
  5. Press the mixture firmly into the prepared baking dish.
  6. Bake for about 20 minutes or until golden.
  7. Allow to cool before cutting into bars.
